Salade de kamut, pumpkin and chickpeas

Le kamut, vous connaissez ?! Non ! Et bien il faut tout de suite vous y mettre alors, car cette céréale, ancêtre du blé, est un vrai petit trésor. Et avec son petit goût de noisette, elle se prête à toutes vos préparations, mais attention, elle est juste un peu longue à cuire !
Le potiron est encore sur les marchés, pas encore supplanté par les légumes du printemps il devient l’allié idéal pour nos salades complètes.


Si vous voulez emporter cette salade en lunch box, pensez à garder vos graines de potiron toastées à part, afin que vous profitiez de leur croquant au moment de déguster !
Salade de kamut, pumpkin and chickpeas
Ingredients (pour 2)
- 150 hand
- 1 small can of chickpeas
- 300 g of pumpkin (butternut squash)
- 1 handful of pumpkin seeds
- 1 filet d’huile d’olive
For the vinaigrette
- 3 c. at c. olive oil
- 2 c. at c. pumpkin oil
- 2 c. at c. cider vinegar
- 1 c. at c. de shoyu
Description
Preheat the oven to 200°.
Peel the pumpkin and cut it into slices. Arrange the slices on a baking tray, drizzle with olive oil and place in the oven 20 min. Book.
Cook the kamut as directed on the package. Set aside to let cool.
Cut the pumpkin into pieces, put it in a salad bowl with the kamut and chickpeas.
Toast the pumpkin seeds in a pan for 5 minutes stirring frequently and add them to the salad.
Make the vinaigrette by mixing the shoyu, vinegar and oils and pour over salad.

Taste without delay.
