D’habitude je suis très attachée à la lentille verte du Puy mais là quand Aline du Point Gourmet m’a proposé de découvrir la lentille blonde de Saint-Flour, j’ai sauté sur l’occasion ! Et puis là ce fût une vraie révélation ! D’une parce que cette lentille à une histoire extraordinaire et aussi parce qu’elle à vraiment un goût de noisette et une texture ferme et dense comme j’aime.

Et puis comme hier je vous avouais ma découverte et ma nouvelle passion pour le fenouil, we put the cover back and we associate it with these great lenses (if so look closely they are wearing a cape !) and salad.

Lentil salad, fennel and red onion

Ingredients (pour 4 people)

  • 200 g blond Saint-Flour lentils
  • 2 fennel
  • 1 Red onion
  • Juice of 1/2 lemon
  • cider vinegar
  • Olive oil
  • Salt and pepper

Description

Cook the lentils as directed on the package., drain them and let them cool.

Finely chop the fennel using a mandoline then marinate them with a drizzle of olive oil and lemon juice for 10 minutes.

Chop the red onion, assemble the different elements together and season.

Re-season to your taste with cider vinegar and olive oil.

    After the fennel/rocket/feta salad, fennel/lentil salad! It's still a great idea! For a next salad, I will try lens, arugula and quinoa with a citrus vinaigrette… I'll tell you what it's worth! Kisses, Celine.

    Thank you for this recipe. I had never eaten fennel before and had no idea how to cook it ! A quick google search later and here I am. ! To this salad I added bell pepper and kumato tomatoes. =) Looking forward to trying more of your recipes..
