Mixed winter salad, fennel, arugula and feta

Avant je n’aimais pas le fenouil mais ça c’était avant…! Avant que Celine me parle d’une petite salade simple où l’on fait mariner le fenouil dans du citron pour qu’il perde de son goût anisé. Et là ce fût la révélation (et la danse de la joie !) car maintenant le fenouil fait partie de mon panier de légumes. And then, j’ai voulue complexifier un peu les choses, et m’amuser à le marier à de la roquette et de la feta pour en faire une salade tout en fraicheur, et qui je dois l’avouer à des petites notes d’été !!!
Une petite salade composée d’hiver (yes yes I swear !) which I hope will seduce you !

Mixed winter salad, fennel, arugula and feta
Ingredients (pour 2 people)
- 1 bunch of arugula
- 2 small fennels
- The juice of a lemon
- 50 g of feta
- 40 g pine nuts
- A few sprigs of chopped dill
- Olive oil
- Salt and pepper
Description
Cut the fennels very finely using a mandolin then marinate them with a drizzle of olive oil and lemon juice for 15 minutes.
Wash the arugula then mix with the fennel then season with salt and pepper.
Finally add the roughly chopped feta, dill and pine nuts, then mix so that the feta binds the sauce a little.

31.1.14Oh that, marinated fennel with lemon, we do a lot in our henhouse ! It's divine… You can also try adding half a fennel when you make a homemade broth., you will see it gives a very pleasant subtle fresh side and immediately you are somewhere between Provence, Camargue and Italy !
