Salad of green lentils from Puy and soft-boiled egg

A chaque fois que je me rends chez ma sœur à Mende, j’en profite pour acheter un bon paquet de lentilles vertes du Puy de producteurs locaux (oui je sais Mende c’est pas le Puy mais ça n’est qu’à une heure et c’est sur la route !). Avec ces lentilles, je nous concocte toujours de bonne petites recettes comme cette simplissime salade avec un oeuf bien coulant par dessus

Vous voyez, il ne faut pas grand chose pour me rendre heureuse ! And you ?!

Salade de lentilles vertes du Puy et œuf mollet

Ingredients (pour 2)

  • 120 g de lentilles vertes du Puy sèches
  • 2 œufs bio ou plein-air
  • 1 tomate (or not !)
  • 1 shallot
  • Un peu de ciboulette
  • A few dried flower petals
  • Olive oil
  • Honey vinegar
  • Du gomasio

Description

Cook the lentils for the time indicated on the package. Drain and let cool.

Chop the shallot and chives. Cut the tomato into quarters.

Mix the lentils together, the tomato, chives and shallot.

For the vinaigrette, mix a little olive oil with honey vinegar, add the gomasio and pour over the salad.

For the eggs, boil water in a saucepan, at the first boil, cook the eggs for 4 min 30. Shell them and serve them on salad.

Sprinkle everything with flower petals and a little fleur de sel.
