Sandwich roll with eggs and alfalfa sprouts
Bon, as we are in France, I'm not forcing you to eat this sandwich at tea time but why not at brunch time?, aperitif or picnic ?!!
Sandwich roll with eggs and alfalfa sprouts
Ingredients (pour 12 rolls)
- 6 slices of white sandwich bread without crust
- 3 eggs
- 1 half tray of alfalfa sprouts or other
- 3 c. to s. mayonnaise (home or industrial)
- 1 good pinch of curry powder
Description
Cook your eggs in the boiling pan for 8-10 minutes (I don't like overcooked hard boiled eggs !). Peel them and chop them more or less finely.
Mix the mayonnaise and curry then add the eggs in pieces and mix.
Take a slice of sandwich bread and crush it with a rolling pin until it is very thin.. Do the same with the rest of the slices.
Spread each slice of sandwich bread with the egg and mayonnaise mixture then add a strip of alfalfa sprouts along it.. Then roll your sandwiches tightly.
Then cut them in half and enjoy !
