Bean and cicoria soup {vegan}

Certes, c’est enfin le printemps depuis quelques semaines mais comme dit le dicton : « en avril ne te découvre pas d’un fil » (allez hop elle nous fait sa mamie là !), bref tout ça pour dire qu’il y a encore des journées bien moches, pluvieuses et fraiches donc une petite soupe c’est pas de refus ma p’tite dame ! Et là ça n’est pas juste une soupe de haricots, non, non, non, c’est une soupe avec un ingrédient magique (ne pensez pas à la licorne ça ne sert à rien !)… de la cicoria ou comprenez chicorée si vous n’avez pas fait d’italien dans votre vie (je parle de la langue bien évidemment !). Anyway, let's go back to our sheep our soup, to tell you that this little bean soup nourishes your man well and that it will be perfect after returning from hiking/jogging/gym…
If you can't find chicory (I wouldn't blame you), you can replace it with dandelions (That’s good, it’s the season) or at worst with kale (it's still in fashion then…). Good soup my darlings !


- 200 g mixed beans and lentils
- 50 g pearl barley
- 1 barrel of chicory (chicory)
- 1 litre 1/2 vegetable broth
- 1 onion
- 2 carrots
- 1 drizzle of olive oil
- 1 garlic clove
- 1 sprig of thyme
- The zest of half a lemon
- Salt and pepper
- Soak the bean mixture and pearl barley together for 8 hours.
- Cut the onion into cubes and brown it over low heat and covered in a casserole dish with a drizzle of olive oil for 5 minutes.
- During this time, cut the carrots into small pieces and add them to the onion with the pressed garlic clove and the thyme then continue cooking 5 minutes.
- Roughly chop the chicory and add it to the casserole.
- Pour in the broth and add the drained beans.
- Cook for around 1 hour 15 minutes over low heat and covered..
- Before serving, adjust the seasoning and add the lemon zest..
