Oui je sais, en ce moment on a plus envie de soupes, coucous et autres plats chauds pour se réchauffer qu’un taboulé bien frais ! Mais détrompez vous car d’une il est important de manger du cru et de deux….pfff pas d’autres arguments !

Ah le tabouléje n’en suis pas à ma première recette sur le blog, oui, car à la maison c’est soit taboulé dans sa version classique, either taboulé libanais, soit taboulé « freestyle » comme ici avec le taboulé aux courgettes ! Bon, and then it must be said that we are a little addicted because it is about one per week, but don't worry we'll heal !!! Anyway, here it is therefore a rather complete version with zucchini, fennel and chickpeas, enough to satisfy the hungriest of you ! And then right now we all want sunshine, heat, beach, idleness, tanning…(well it must be said that I am a little lacking too because I have not yet taken a vacation but it happens !), so why not a tabbouleh to bring back the sun ?!

Tabbouleh with zucchini, fennel and chickpeas

Ingredients
  1. 375 g fine couscous semolina
  2. The juice of three lemons
  3. 10 key of water
  4. 8 cl d'huile d'olive
  5. 2 small zucchini
  6. 150 g cooked chickpeas
  7. 1 small fennel
  8. 1/2 bunch of mint
  9. You sell
Preparation
  1. In a salad bowl, pour the water, olive oil, lemon juice and salt then add the couscous semolina.
  2. Wash and chop the mint and add it to the salad bowl. Do the same with the onions
  3. Cut the zucchini into small dice and finely chop the fennel using a mandoline then put everything in the salad bowl.
  4. Add the chickpeas.
  5. Stir well and leave to swell in a cool place for 1 minimum hour.
