Summer vegetables pie {sans gluten- without milk}

Vous le savez déjà surement mais à la maison nous aimons beaucoup les tartes, quiches et autres tartes fines. C’est rapide à faire et accompagné d’une salade, ça fait un repas complet pour toute la famille. Voici une idée de tarte sans gluten car ça faisait longtemps que je ne vous en avais pas proposé une, une tarte aux légumes d’été composée d’aubergines et de tomates avec un fond moutardé (pas trop non plus !). La pâte sans gluten est à base de farine de mais, farine que j’affectionne tout particulièrement pour sa saveur, si vous ne la connaissez pas encore, go for it !

- 1 aubergine
- 1 large old tomato
- 1 tablespoon of mustard
- 3 garlic cloves
- Oregano
- Olive oil

- FOR THE DOUGH
- 120 g corn flour
- 100 g rice flour
- 4 cl of olive oil
- 1 egg
- 5 tablespoons of cold water
- You sell
- For the dough, mix all the ingredients together in a food processor fitted with a blade or by hand to form a homogeneous dough and set aside in a cool place 15 minutes.
- Lower it onto a sheet of baking paper and place it in a tart mold..
- Preheat the oven to 210°.
- Spread the mustard on the bottom of the pastry.
- Cut the vegetables into slices 5 mm then add them to the dough alternating.
- Then add the garlic cut into slices.
- Drizzle with a good drizzle of olive oil, add oregano and salt.
- Bake 40 minutes.

Summer, it’s really a joy to make fine tarts, the vegetables lend themselves so easily and go wonderfully with the mustard and herbs de provence… Corn flour in pie crust, I have never tried, but I should have thought about it considering how much I love this cereal!
