Tarte rustique à la rhubarbe

La rhubarbe c’est un peu ma grande passion de l’été, mon fruit chouchou car j’adore ça. Je dévalise sans cesse le plant qui se trouve chez mes parents, et le pauvre n’a des fois pas le temps de s’en remettre ! Alors voici une tarte rustique à la rhubarbe jsute parfaite.

C’est une tarte que j’adore parce que d’une elle est simple et simplement bonne (ok, nul le jeu de mots, I go out !). J’y ajoute de la poudre d’amandes ce qui la rend toute douce (oui car il faut avouer que c’est un peu acide sur les bords la rhubarbe !) Yum !!!

Rustic rhubarb tart

Ingredients

  • 750 g rhubarb
  • 100 g ground almonds
  • 65 g cane sugar

For the dough

  • 250 g of flour
  • 150 g of butter
  • 70 g icing sugar
  • 1 Egg yolk
  • un peu d’eau si besoin

Description

To make the dough, mélangez ensemble le beurre, sugar and egg yolk to obtain a smooth mixture. Then add the flour all at once, Knead and form a ball. Reserve the dough in the fridge for 1 hour.

Preheat the oven to 190°.

Wash the rhubarb and cut it into sections of 8 cm environ.

Mix, in a bowl, almond powder and 2/3 sugar.

Spread the dough until it has a thickness of 3-4 mm then place it on a baking sheet covered with baked parchment paper. Add the almond sugar mixture to the dough, leaving about 5-7 centimeters of dough on the edges.

Put the rhubarb sections on top and then sprinkle with the rest of the sugar. Fold the edges of dough on the rhubarb and bake 35 min.

Enjoy warm or cold.
