Cream Of Cauliflower {vegan}

Ça y est, c’est l’heure de la dernière recette de l’année… c’est aussi l’heure de faire un petit bilan. 2014 à été pour moi une année de grands changements… la naissance de mon propre blog en août dernier, de belles rencontres, la concrétisation de nouveaux projets… et c’est avec un plaisir non dissimulé que je vous souhaite un joli dernier jour de 2014 et un bon réveillon ce soir ! Allez revenons à nos veloutés avec ce velouté de chou-fleur qui fera son petit effet ce soir sur la table du réveillon, enfin si vous arrivez à dégoter une de ces merveilles de chou-fleur violet. I am always ecstatic when I come across one of these specimens on the stalls., I find them so beautiful and attractive (we're talking about cauliflower here, hein !!!).
Finally, there it is, I wanted a touch of color to end the year, a year which I hope has been rich on your side, and I can only wish you the best for the year 2015. Happy New Year my little wolves and happy new year !


- 1 large purple cauliflower
- 2 spring onions
- 75 cl of vegetable broth
- 20 cl of almond cream
- Olive oil
- 1 pinch of Espelette pepper
- Salt and pepper
- Cut the cauliflower into small florets, wash and reserve.
- Slice the onions then sweat them with a drizzle of olive oil in a casserole dish for 5 min on low heat.
- Add the cauliflower florets and the broth, bring to a boil and cook 15 min.
- Add the almond cream and mix until smooth and fluffy..
- Decorate with a drizzle of sweet olive oil, sliced green onions and raw cauliflower.
