Watermelon salad with herbs and grilled halloumi

Mais quelle idée lui est passée par la tête pour manger de la salade de pastèque avec des herbes, du fromage et de l’huile d’olive ?!!! Oui je sais…  mais la pastèque en version salée c’est juste génial ! Cette salade fraîche à des petits airs de moyen-orient et tous les ingrédients se marient à merveille. L’halloumi vous connaissez ?! Non ?! Bon, il va falloir y remédier car ce fromage est juste une tuerie, j’adore sa texture un peu caoutchouteuse une fois grillé, il faut que vous goûtiez ça ! Il va juste falloir que vous trouviez une bonne épicerie méditerranéenne !

Summer is not over yet and watermelon season is still in full swing, take the opportunity to concoct this little salad, which I am sure will surprise you and shake up your daily life (well yes it changes grated carrots !).

Watermelon salad with herbs and grilled halloumi

Ingredients (pour 4 people)

  • 1/2 watermelon
  • 200 g halloumi cheese
  • 150 g arugula
  • 1 small bunch of mint
  • 30 g pine nuts
  • 1 filet d’huile d’olive
  • Salt and pepper

Description

Cut the watermelon into quarters then cut triangles.

Mix the washed arugula and the coarsely chopped mint leaves.

Dry roast the pine nuts in a pan.

Serve the salad in a large dish, putting the arugula first, watermelon and pine nuts. Season with salt and pepper and a drizzle of olive oil.

To finish, cut slices of halloumi half a centimeter thick. Bring them back 2 minutes per side in a pan with a drizzle of olive oil.

Add the hot halloumi to the salad and serve immediately.

It's a salad full of colors and good flavors, perfect for this end of summer…

    Oh yes !!! I love watermelon salad ! And I read I don't know where only to benefit from the benefits (hardly redundant this expression) watermelon, it had to be paired with cheese or nuts. I usually use feta, but I like this grilled halloumi version ! I'll try if I can get my hands on that cheese !
