Salted pretzels {vegan}

S’il y a bien quelque chose qui représente Noël pour moi ce sont bien les bretzels (et les bonhommes en pain d’épices aussi !), souvenir gourmand des marchés de Noël dans l’Est. Je ne m’étais jamais penchée sur la question des bretzels mais Monsieur m’en réclamant depuis un bout de temps, je me suis dis que ça serait pas mal de vous en proposer pour Noël. Et bien à ma grande surprise il n’y a rien de trop compliquer dans la confection des bretzels, bon, for the little anecdote I still tried it twice because the first time an emergency made me forget the pretzels in their bath of bicarbonate and salt (I'll let you imagine the face of the pretzels which unfortunately went straight into the trash !). Brief, despite this mishap the second tour was good, and I must say that apart from their slightly less smooth appearance than normal (long live diversity !), they are nonetheless very tasty !
You have a free choice regarding the seeds you sprinkle on top., regarding their size, you can divide it in half to make a more appetizing version !


- 560 g of flour T65
- 260 g of lukewarm water
- 70 g vegetable margarine
- 1 packet of baker's yeast
- 5 grams of sugar
- 5 g de sel
- FOR THE BATH
- 1,5 liters of water
- 60 g baking soda
- 20 g de sel
- FOR GARNISH
- Seeds, a choice : poppy, squash, lin, sesame, sunflower, cumin...
- You gros sel
- Pour the yeast into a small bowl then add 2 tablespoons of lukewarm water and let it sit 10 minutes.
- In a salad bowl, put the flour, the yeast, margarine in pieces, sugar and salt then start kneading by hand or in a robot fitted with a sheet. Once the shortcrust pastry is made, add water little by little and continue kneading until you obtain a smooth dough., elastic and non-sticky. Leave to rest for 2 hours, covered and in a warm place..
- Punch down the dough with your fist and form around 8 To 10 dough pieces of equivalent weight (about 100g).
- Start shaping the pretzels, to do this, make a long sausage of approximately 60 cm long then cross the ends before folding them lower to form the pretzel.
- Cut the bottom of the pretzel with a knife and proceed like this for all.
- Preheat the oven to 190°.
- Prepare the bath by mixing all the ingredients, boil the water, lower the heat and put the pretzels in for 30 seconds then remove them to a baking tray.
- At this time sprinkle the pretzels with the chosen seeds.
- Bake 15-18 minutes.
