Wholemeal brioche in olive oil with apricot paste {vegan}

Faire une recette de brioche complète saine, potentiellement vegan, voilà ce dont j’avais vraiment envie. Bon, je dois vous avouer que c’est vite devenu un peu la galère cette histoire de brioche vegan. Une trop grasse, une qui ne voulais pas monter…anyway… mais après quelques modifications, j’ai enfin trouvé une texture qui m’a plu. Bon alors c’est sûr, ça n’est pas aussi léger et filant qu’une brioche au beurre classique, c’est plus dense et plus nourrissant aussi, mais le goût est vraiment là.
Olive oil brings that little extra touch and goes wonderfully with the dried apricot, so no, don't change to a more neutral oil because that would be a shame. I myself was surprised by the taste, I who had never tried brioche with olive oil.


- 500 g whole wheat flour
- 100 grams of sugar
- 1/3 a glass of olive oil
- 1/2 c. teaspoon of salt
- 4 c. tablespoon of dehydrated sourdough or 2 packets of baker's yeast
- 300 g chopped dried apricots
- 3 c. tbsp. cold water (optional)
- Put the yeast with 2 teaspoons of lukewarm water and let it sit 10 minutes, This is not necessary if you use sourdough.
- Put the flour, sugar, salt and olive oil in a salad bowl. Add the yeast and knead 10 minutes to obtain a nice elastic dough (add a little cold water if necessary).
- Let the dough rest covered in a warm place for 1 approximately hour.
- Punch down the dough with your fist and spread it into a rectangular shape on 5 mm thick. Add the apricots all over the dough and roll from the long side.
- Then cut the sausage into pieces of 5 cm approximately and place them on a baking tray or in a mold of your choice.
- Leave to rest covered 30 min environ.
- Place the brioche in the cold oven and cook at 200° for 30 minutes.
Enjoy warm out of the oven, it’s even better !!!
