Cookies with speculoos and chocolate paste

Ingredients (for twenty)

  • 260 g de pâte de spéculoos
  • 200 g of flour
  • 150 g good dark chocolate
  • 100 g cane sugar
  • 50 g of butter
  • 2 eggs
  • 2 tsp baking soda

Description

Preheat the oven to 200°.

Using a mixer, mix the butter and the sugar then add the eggs and the speculoos paste. Then add the flour and baking soda, mix without overworking the mixture.

Break the chocolate into pieces and add it to the dough.

Using an ice cream scoop, form balls of dough and place them on a baking sheet.

I discovered your blog via the saint genix recipe, a delight ! I wanted to repeat it with the speculoos cookie dough recipe, which had a great success ! and I even went so far as to change the speculoos dough for peanut butter… A massacre !
Continue ! Your blog is a true paradise for the taste buds !!

If you don't know what to do with speculoos paste : a warm apple pie with a scoop of vanilla ice cream covered with melted speculoos paste ! Simply delicious

Hmmmm I discovered your blog while looking for a recipe for cookies with speculoos dough, and it is for yours that I have opted ! A MASSACRE ! I just added 15 grams of oat bran (the satiating effect prevents me from eating them all directly hahaha)
Anyway, I'm very happy because your blog corresponds well to my aspirations. (a day in grandma mode 100% pure butter, one day healthy girl! lol) I will try several of your recipes and I think the next one will be the no-bake date brownie. Merci !

Bonjour , thank you for your recipe . I opted for this one to make sixty cookies for a party 🙂 I have a few questions though … If you have time I would love to read you .
    1) Do you think that adding basic white sugar would mess up the recipe? ? ( Apart from the taste which would differ )
    2) I don't have a plate as I can see from your photo . I thought so arrange them on a wire rack with parchment paper. . Do you think it will be ok ? Should I reduce the cooking ?
    3) I read on a well-known blog that it was possible to freeze balls of cookie dough . What do you think ?
Huge thank you for reading me already and I hope to see you soon 🙂

White sugar can pass, the taste will just be a little different. For cooking on a grid with baking paper no problem it does not change anything. As for freezing, I don't know because I've never done !
      Bon cookies !
