Raspberry and passion curd cupcakes

Comme promis, voici une recette avec le curd à la passion publié hier. De bonnes framboises fraîches du jardin de mes parents (oui oui vous aurez déjà remarqué qu’avec la rhubarbe mais pas que, ils sont fournisseurs « officiels » de pas mal de fruits et légumes de mes recettes !), et du fruit de la passion voilà une association très fruitée et pleine de gourmandise pour cette été.


Le topping en curd pour des cupcakes, je n’avais jamais testé mais c’est topissime et franchement plus léger que les topping classiques. Even if I have nothing against them because I love them too, but this is a real discovery !
I used buttermilk for my muffin batter, I find that it makes them terribly soft and I added (like always) cereal flakes for a little crunch !

Raspberry and passion curd cupcakes
Ingredients (pour 12)
For the muffin batter
- 315 g of flour
- 120 g cane sugar
- 35 g rye or oat flakes
- 2 c. at c. yeast
- 1 c. at c. bicarbonate of soude
- 1 big egg
- 75 g semi-salted butter
- 210 ml of buttermilk
- 150 g of raspberries and a little more for decoration
For the topping
- 65 grams of sugar
- 50 g of butter
- 2 eggs
- 3 passion fruit
Description
To make the passion curd for the topping the recipe ici.
Preheat the oven to 190°.
Mix together the flour, sugar, oatmeal, yeast and bicarbonate in a salad bowl.
In another container, mix the egg, buttermilk and previously melted butter.
Add this mixture to the flour and mix without overworking the dough. Then add the raspberries to the dough, stirring gently..
Pour the batter into the muffin tins and bake. 20 min.
Let the muffins cool before adding the passion curd as a topping and decorating with a few raspberries..
