Falafel with herbs
Ça n’est pas mon premier essai de falafels car j’adore ça, je vous avais d’ailleurs déjà proposé la recette des falafel classiques. Cette fois, j’ai voulu tester une version toute autre, une version de falafels aux herbes, à base de persil et d’épinards (bon aussi parce que j’avais acheté pas mal d’épinards au marché, sans partir avec une idée précise de ce que j’allais en faire !). Je dois dire aussi que j’ai un peu allégé la recette de base, exit la friture, un simple aller-retour à la poêle et les falafels finissent leur cuisson au four (life is not beautiful ?!). Good but as I know you are greedy, you can generously sprinkle these falafels with tahini sauce for which you will find the recipe ici.
These herbed falafels are also a great way to get kids to eat spinach, in a fun and flavorful form. And more, they make a complete meal served with a good seasonal salad… yes I know I'm a great girl who cooks great meals for you… ok I have the right to dream a little anyway, non ?!
- 200 g dried chickpeas
- 1 small onion
- 3 tablespoons of chickpea flour
- 1 clove garlic
- 1 bouquet of parsley
- 300 g fresh spinach
- 1 tablespoon of cumin seeds
- 1 tablespoon of coriander seeds
- 1/2 teaspoon of chili
- 2 teaspoons baking soda
- 3 tablespoons of water
- 1 little spoon of salt
- 1 filet d'huile d'olive
- The day before, soak the chickpeas in cold water.
- The day after, rinse and drain the chickpeas then put in a blender with the onion, garlic, parsley, the spinach, just blanched, then mix everything as finely as possible.
- Once the chickpeas are finely chopped, add the spices, le bicarbonate, salt, water and flour, stir to obtain a nice smooth paste (add a little flour if necessary) and thick. Book cool 1 hour.
- Heat a little oil in a pan.
- Make balls of dough the size of a small golf ball, using an ice cream scoop, for example., flatten them then put them in the pan. Let it cook 3 minutes per side then place them on a baking tray.
- Bake 15 minutes at 200° to finish cooking.

29.1.15Umm that looks so good. I would like to try but I don't have chickpea flour. I guess I can't replace it with wheat flour, otherwise they are no longer falafels ?

29.1.15Wow wow wow j’adore !!! I have to try this, and quickly (and the tahini sauce too by the way) !! Just two quick questions : why is there frying oil in the list of ingredients?, if you make them in the pan ? And you think the recipe can be made with canned spinach (a bit like you, I have one lying around and I don't know what to do with it !)

31.1.15Yes, chickpeas are never cooked in falafels, just soaked that’s what gives the texture !
