Je suis une inconditionnelle de galettes végétale mais avant mon fournisseur officiel était l’épicerie bio. Alors pourquoi ne pas me lancer avec des ingrédients qui me font envie ?! Vous allez voir, il y a des milliers de possibilités !

Vegetable rice cakes, lentils and pumpkin

Ingredients (pour 6-8 pancakes)

  • 300 g de potimarron
  • 100 g of whole rice
  • 100 g de pousses de lentilles germées
  • 80 g de lentilles mélangées
  • 1 pincée de curry
  • Salt and pepper
  • 1 c. at c. walnut oil
  • Olive oil

Description

Preheat the oven to 200°.

Coupez le potimarron en morceaux, drizzle with olive oil and place in the oven 20 min. Book.

Cook the rice as directed on the package and cook the lentils, adding 2-3 minutes of cooking at the given indication. Drain and reserve.

Put the pumpkin, rice, lentils, walnut oil, curry and sprouted lentil shoots in a salad bowl, mix then season. Moisten your fingers and form patties.

Book cool 30 minutes so that they are very firm.

Heat a drizzle of olive oil in a pan and sear 5 minutes per side.

  • I also love vegetable pancakes, I sometimes make it with leftover rice from the day before. It’s a good idea to add pumpkin and lentils., I will think about it next time.

    It looks sooo good!!!
    I would love to try this kind of thing at home but it’s already meat-free., I won't be able to make the man swallow it without added sauce! An idea for a little sauce that could accompany this pancake??       Good then to convince the man to eat it, why not serve them with a Roquefort or Bleu des Causses sauce ?! Hot cream in which we melt the blue cheese, salt and pepper and that's it ! Or otherwise I also thought about guacamole but it’s a little less of a sauce and it’s like vegetables. !!!
