Roasted summer vegetables with zaatar
On reste dans l’inspiration moyen-orient de ces derniers jours, oui, car après les aubergines farcies voici petite recette de légumes d’été rôtis au zaatar. Quand nous avons pris la décision d’arrêter Emilie and Lea, nous nous sommes vu quelque fois pour mêler nos compétences et nous aider dans la démarche de création de nos 2 nouveaux blogs respectifs. J’ai donc fait cette petite recette pour le déjeuner d’un de nos jours de travail, et je dois dire que Leah à été séduite par ces petits légumes. Nothing too complicated in this recipe, yes because the construction of the blog takes me time, I didn't have to spend hours in the kitchen !
And that's also how I discovered roasted chickpeas, (but if you know, we see them blooming on blogs as an aperitif !), because for this recipe, the cap of my olive oil has dropped, and a lot but then too much oil ended up in the middle of the vegetables !!! Nevermind, we still enjoyed this improvised frying !
- 4 small eggplants
- 2 courgettes
- 200 g cooked chickpeas
- 2 tablespoons of zaatar
- 1 filet d'huile d'olive
- 1/2 bunch of mint
- Salt and pepper
- Preheat the oven to 200°.
- Cut the eggplants into 4 or in 6 in the length.
- Cut the zucchini the same way.
- Arrange all the vegetables on a baking sheet.
- Pour a drizzle of olive oil on top then add the zaatar, salt and pepper.
- Bake 30-35 minutes, stirring occasionally.
- Add the chopped mint.
Simply serve with couscous semolina and enjoy !
