Je suis une vrai grande fan de curries, mais ça je crois que je vous le disais déjà avec la recette du dal aux pois cassés jaunes, et encore plus de curry thaï. Oui quand on me propose du curry, je ne me tiens plus (danse de la joie, tout ça tout ça !), je pourrais d’ailleurs en manger tous les jours et même au petit déjeuner ( même pas peur !). Bon, mais comme Monsieur n’est pas ultra fan comme moi, je limite à un par semaine, et puis je change souvent d’ingrédients, pour ne pas se lasser. Aujourd’hui c’est donc un curry thaï aux légumes, oui car comme vous avez pu le voir, we often eat vegan around here. Not that we no longer love meat but we limit it, and we favor local and organic products.

Anyway, there only vegetables, squash, carrots, potatoes and flat beans, so it’s a perfect little dish for a light dinner, good if you eat it without the rice ! I know what you're going to eat tonight, Come on, it doesn’t take long to prepare, I assure you. !

Thai vegetable curry

Ingredients
  1. 400 g of squash
  2. 400 g flat beans
  3. 3 potatoes
  4. 3-4 carrots
  5. 70 cl of coconut milk
  6. 1 teaspoon of red curry paste
  7. 2 cloves of garlic
  8. 1 ginger pieces
  9. You sell
Preparation
  1. Peel and cut all the vegetables into equal sized pieces.
  2. Mix the garlic and ginger together to form a paste.
  3. Brown this paste in a pan with neutral oil and add the curry paste.
  4. Then add all the vegetables except the beans. Mix and pour in the coconut milk.
  5. Let simmer over medium heat 25-30 minutes.
  6. Meanwhile, blanch the beans in boiling salted water for 5 minutes.
  7. 5 minutes before the end of cooking, add the beans and salt.
  8. Serve with Thai rice.
