Männele without milk {Saint Nicolas}
Depuis trois ans maintenant, j’essaye toujours de vous préparer un petit quelque-chose pour la Saint-Nicolas, et cette année j’ai eu envie de männele. Je dois avouer que c’est un peu la faute de Flo et de Létitia, qui en ont fait cette semaine sur leurs blogs respectifs… et comme je suis faible et influençable bah je m’y suis mise aussi ! Ne connaissant pas la recette, je suis partie sur une recette de pains au lait mais cette fois-ci c’est une version sans lait (le comble pour un pain au lait me direz-vous !). Comme ça, Mini-Mademoiselle a pu déguster ses premières brioches, and I can tell you that she didn’t have to be asked !!!
These are my first männele, So I struggled a bit with the cutting, some don't look like much (well at least not really to men or to Martian men !), but in the lot there are some that are cute ! Anyway, they were all devoured indiscriminately (yes no discrimination with us !).
- 400 g semi-whole wheat flour (T80)
- 15 cl of oat milk
- 120 g of margarine
- 3 eggs + 1 jaune
- 40 g cane sugar
- 1 packet of baker's yeast
- 2 g de sel
- Some dried raisins
- Warm the milk to 35°.
- Put the yeast with 1 tablespoon of warm milk, let it rest 10 min then stir.
- For the dough, put the flour in a bowl, make a well and add the yeast-milk mixture in the center. Work the dough between your fingers or in a food processor and add the eggs., sugar and salt. Knead the dough and stretch it, then add the margarine. Knead the dough until it comes away from the bowl.
- Let the dough rise, covered, for 2 hours.
- Degas the dough with the point then reserve it in the fridge between 2 hours and one night.
- Punch down the dough again without working it on a floured surface., then cut it into 20 dough pieces.
- Shape them männele by forming sausages between your hands, leaving them free 2 cm for the head. Then cut out the legs and arms and place them on a baking tray..
- let rise 30 minutes.
- Preheat the oven to 170°.
- Brown the männele with the egg yolk diluted with 1 tablespoon of vegetable milk then add raisins to make the buttons.
- Bake 12 minutes.

9.12.14Ahah there is Botero sleeping in you! I had also seen Flo’s mannele, and I totally understand that you succumbed! I told Flo that I would eat the head of her mannele, for you it would rather be their legs which are plumper than the rest 🙂
