Chocolate praline and raspberry mousse
Ahhhh… la mousse au chocolat…. je vous en parlait déjà ici, mais là c’est une petite tuerie que je vous propose, une mousse au chocolat praliné et framboises. Oui des framboises, et surtout ne vous en passez pas car la mousse serait bien trop écœurante sans (enfin sauf pour ceux qui sont capable de manger le pot de pâte à tartiner à la petite cuillère !). Oui, car elles apportent cette touche acidulée indispensable à ce dessert, qui est en réalité une petite tuerie (qui à dit bombe calorique ?!…pfff oublions l’épreuve du maillot !).

Chocolate praline and raspberry mousse
Ingredients (pour 4 people)
- 100 g praline
- 60 g good chocolate
- 3 eggs
- 10 g of butter
- 2 c. to s. cane sugar
- 1 pinch of salt
- Optional : chocolate shavings and/or bitter cocoa
Description
Take your eggs out of the fridge ahead of time to bring them to room temperature..
Melt the chocolate, the praline and the butter in a bain-marie or in the microwave. Mix well and let cool.
Separate the yolks from the whites then add the egg yolks one by one to the chocolate mixture.
Whip the egg whites with the pinch of salt then add the sugar little by little. Gently fold the egg whites into the previous mixture.
Half fill the verrines with the mousse, add some raspberries then cover with mousse. Finish with some raspberries on top.
Book 2 cool hours. Before tasting, add chocolate shavings and/or bitter cocoa on top.

13.6.14Hi, Your mousse must have made people happy.. and is clearly the right plan to please ! When I saw "praline" I wondered how you mitigated the strong and borderline disgusting taste of praline ; and I see that you cleverly use a mixture of normal chocolate and praline. 🙂 Good idea that these extra raspberries for their tangy side. I'll think about it when I try a next chocolate mousse 🙂
