Spinach and Parmesan Muffins

Muffins aux épinards

La saison des épinards bat son plein et les étales des marchés en regorgent et puis hop, like that, une envie de muffins légers et gourmands pour ravir les papilles de mes co-équipiers du bad’. Et je crois que ça a bien marché, même si je les soupçonne d’aimer les recettes plus gourmandes comme celle des muffins munster, bacon, shallot !!!

C’est comme toujours tout simple et simplement bon (pourrit ce jeu de mot !!!)…enfin bref même les enfants qui n’aiment pas les épinards y succomberont (enfin j’espère car ce muffin n’a pas été testé sur le jeune public !) !

Spinach and Parmesan Muffins

Ingredients (pour 12 muffins)

  • 250 g of flour
  • 15 cl of milk
  • 8 cl d’huile d’olive
  • 2 eggs
  • 100 g of parmesan
  • 300 g fresh spinach
  • 1 packet of yeast
  • 1 c. at c. bicarbonate of soude
  • sesame seeds
  • Salt and pepper

Description

Preheat the oven to 170°.

During this time, wash the spinach and season by putting a drizzle of olive oil in a pan with the spinach. Bring it all back 5 minutes, season, finely chop and set aside.

Mix the flour together, the yeast, le bicarbonate, salt and pepper.

In another bowl, beat the eggs with the oil and milk.

Assemble the two preparations without overworking the dough then add the spinach and parmesan.

Pour the mixture into non-stick or buttered and floured muffin tins.. Sprinkle a little sesame seeds on top.

Bake 25 minutes.
