Oven-roasted aubergines, feta, candied tomatoes and basil

Cette année au jardin de mes parents il y a eu quelques petites aubergines trop mignonnes et j’ai eu la chance d’en avoir quelques unes. SO, je me suis demandé ce que je pourrais bien en faire (ah l’éternelle question de quoi faire à manger !!!) et j’ai trouvé ! Bah oui sinon je ne vous proposerais pas de recette aujourd’hui voyons !

Comment profiter pleinement des dernières aubergines ?! Et bien simplement en les faisant rotir au four avec un peu de feta et des tomato confit, hmmmm…

Oven-roasted aubergines, feta, candied tomatoes and basil

Ingredients (pour 2)

  • 4-5 minis aubergines
  • 75 g of feta
  • Des tomato confit
  • A few basil leaves
  • Olive oil
  • Salt and pepper

Description

Preheat the oven to 200°.

Lavez et découpez les aubergines en deux dans la longueur. Crisscross the flesh with a knife and place them in a baking dish..

Then add the feta into pieces and drizzle with olive oil then season.

Bake 35 minutes environ.

Meanwhile, chop the basil and mix it with a few candied tomatoes.

Spread this mixture on the eggplants once out of the oven.

Serve warm or cold as an aperitif or as an appetizer.
