Spiced Roasted Pumpkin and Chickpeas

Comme vous avez pu le remarquer, avec Monsieur nous mangeons de plus en plus végétarien et qui dit végétarien ne veux pas dire rébarbatif, bien au contraire.

SO, pour faire des petits plats simples, rapides et savoureux il y a des milliers de possibilités. Aujourd’hui rien de plus simple, du potiron, des pois-chiches, des épices et hop le tout au four pour un résultat savoureux et sain. J’ai accompagné ce petit plat d’une semoule de couscous un peu spéciale, promis je vous montre ça dès demain !

Et si vous n’avez plus de courge, remplacez-la par de la carotte par exemple !

Spiced Roasted Pumpkin and Chickpeas

Ingredients (pour 4)

  • 600 g de potiron (courge musquée)
  • 250 g chickpeas
  • 1 c. to s. de cumin
  • 1 c. to s. cumin seeds
  • 1 c. at c. the pepper
  • 1/2 c. at c. cinnamon
  • 1 pinch of chilli
  • 1 filet d’huile d’olive
  • Salt and pepper

Description

Preheat the oven to 200°.

Peel and cut the pumpkin into cubes, rinse the chickpeas and put everything in a salad bowl.

Add oil and spices, season and stir well.

Pour onto a baking sheet and bake 35 minutes. Stir occasionally.

    Tried this evening with a family of squash reluctant, served with rice, yogurt and cucumber
