Je reviens par ici après 3 semaines de coupure qui m’ont fait un bien fou (les vacances aussi en autre !) ! Et je reviens avec une petite recette pour prolonger l’été, bah oui il fait beau et chaud en ce moment, ça serait bête de ne pas en profiter ! Voici donc une recette de courgettes, c’est quand même un légume incontournable de l’été et on tourne souvent autour du pot pour le cuisiner. Je vous propose donc une recette de salade de courgettes crues et cuites avec des herbes, des pignons et des tomates, de quoi ravir toutes les papilles, même celles des plus jeunes.

Salad of raw and roasted zucchini

POUR 4

  • 2 green zucchini
  • 2 yellow zucchini
  • fresh herbs (basil, chive, oregano…)
  • 400 g cherry tomatoes
  • 50 g pine nuts
  • 3 garlic cloves in shirt
  • Olive oil
  • The juice of a lemon
  • Salt and pepper
  • Cut the zucchini in half lengthwise then in half rings.
  • Preheat the oven to 200°.
  • Take half of the zucchini and arrange them on a baking sheet. Add a drizzle of olive oil, garlic cloves, you sell, a pinch of pepper, oregano and bake 15 minutes, stirring halfway through cooking.
  • Once the courgettes are cooked, put them to cool.
  • In a bowl, mix a good drizzle of olive oil with the lemon juice, crushed cooked garlic and salt. Add the raw zucchini and the halved cherry tomatoes then add the coarsely chopped herbs.
  • Finish by adding the roasted zucchini, stir and serve !
