Strawberry Scones and Coconut Milk {without milk}
Le petit déjeuner c’est un peu une institution chez nous, et quand rien n’a été préparé et que la seule chose qui reste dans la placard ce sont des galettes de riz, et bien je peux vous dire que les matins sont un peu moins chantants (quoique je me régale assez bien d’une galette de riz avec du beurre de cacahuète et une banane coupée en rondelle par dessus !). Bref mis à part les traditionnels pancakes du dimanche, en semaine nous alternons entre banana bread, granola et scones. Et comme l’été arrive, si si je vous assure c’est toujours bien prévu pour le 21 juin, I made you a little recipe for very light strawberry scones (yes the jersey coughed coughed !). Made from coconut milk and coconut oil, this little recipe will, I am sure (Coué method hello !), a little sunshine in your breakfasts.
As for me, I very much hope for the return of the sun because my vacation is coming soon !
- 310 g T80 flour
- 200 g strawberries
- 70 g of coconut oil
- 2 eggs
- 150 ml coconut milk
- 45 grams of sugar
- 1/2 baking powder
- Beat the eggs with the sugar then add the previously melted coconut oil.
- Then add the flour, yeast and coconut milk, stir without overworking the dough.
- Cut the strawberries into pieces and carefully add them to the dough.
- Book cool 30 min.
- Preheat the oven to 180°.
- Make small piles of dough using a spoon on a baking tray covered with parchment paper.
- Bake 15 minutes.

15.6.16I think strawberry scones are delicious.. I already made one like this, combined with rhubarb for a little touch of acidity. All I have to do now is try it with coconut milk., which is always a great association !
