Tapioca with coconut milk, mango-banana and pomegranate puree
Je ne sais pas si vous connaissez les perles de tapioca, si la réponse est oui au revoir (Nah, I'm joking !), si c’est non c’est l’occasion pour vous de découvrir un dessert que j’adore, le tapioca au lait de coco. Le tapioca, nos grands-mères l’utilisait déjà dans les soupes, mais aujourd’hui ces petites perles sont un peu tombées en désuétude par chez nous, mais sont très appréciées en cuisine asiatique. J’adore leur petite texture légèrement gluante parfaite pour un dessert qui remplace à merveille le riz au lait !
Served with a small fruit puree and pomegranate for the crunch and the tangy side, I'm sure this dessert will become your "must it" of the moment (yes I am young, what is not said anymore ?!!!) and it's vegan (youhou !!!).
To be enjoyed the same day as tapioca tends to harden.
Tapioca with coconut milk, purée mangue banane et grenade
Ingredients (pour 6-8 verrines)
- 100 g of tapioca in pearls
- 80 cl of coconut milk
- 60 g cane sugar
- 1 mango
- 2 bananas
- 1 grenade
Description
Put the coconut milk and sugar in a saucepan and gently bring everything to a boil. Pour over the tapioca pearls and cook 20-25 minutes over low heat, stirring regularly.
Meanwhile, make the mango-banana puree by simply mixing the flesh of the mango and the bananas together. You can add 20 g sugar if needed.
Once the tapioca is cooked, Divide it into the verrines and add the fruit puree on top.
Leave to cool in the fridge 30 minutes.
Finish by decorating with a few pomegranate seeds and enjoy !
