Strawberry Peppermint Pie

Les variétés de fraises de la fin d’été, sont sûrement mes préférées. Entre la charlotte, la mara des bois ou encore la fraise ronde de Belgique, je me régale à trouver ce fruit jusqu’à fin septembre sur les étals du marché. Et comme je ne la cuisine pas souvent, oui je suis une puriste qui préfère la manger crue que cuite, et que j’adore les tartes, je me suis dis qu’une petite tarte aux fraises ne nous ferait pas de mal !!!
Et comme j’avais envie de quelque chose de frais, et que je suis fan de la menthe poivrée, which I had already tested in a strawberry smoothie, I decided to integrate it into a diplomatic cream. I also prepared this delicious cream for Mr.’s birthday cake, whose recipe cannot be delayed !


Monsieur literally devoured the pie (well I helped him a little anyway), Yeah, it still tastes better the same day, so don’t hesitate to share it !
Tarte aux fraises et à la menthe poivrée
Ingredients (for a rectangular pie 8-10 parts)
- 250 g strawberries (here from charlotte)
- 1 small bouquet of peppermint
For the diplomat cream
- 25 cl of milk
- 2 egg yolks
- 15 g of flour
- 15 g de maïzena
- 45 grams of sugar
- 25 cl of liquid cream
- 20 g icing sugar
- 2 Gelatin sheets
For the sweet dough
- 250 g semi-whole wheat flour
- 125 g of butter
- 75 g cane sugar
- 1 egg
- 1 pinch of salt
Description
To prepare your sweet dough, work the butter and the sugar by hand so that the butter becomes "ointment". Then add the whole egg and work the mixture again. Add the flour and salt all at once and mix until you get a smooth paste..
Form a ball and refrigerate 1 hour.
During this time, make the pastry cream, for this, soften the gelatin in cold water. Beat the egg yolks with the sugar until the mixture whitens. Then add the flour and cornstarch to the mixture.. Boil the milk, once boiling, pour it over the egg yolk mixture, whisking. Return the mixture to the saucepan and over high heat., whisk constantly until the mixture thickens. Add the drained gelatine leaves and mix. Pour the pastry cream into a bowl, film in contact and book at the expense.
Preheat the oven to 180°.
Spread the dough on 3-4 mm thick forming a rectangle. Place it on a baking tray covered with baking paper.. Pierce the dough with a fork so that the dough does not deform during baking.
Bake 15-18 minutes and let cool.
Finish the diplomate cream by whisking the liquid cream into a very firm whipped cream then incorporate the sugar while continuing to whisk. Incorporate this whipped cream delicately with a well-chilled pastry cream spatula. Add the chopped mint and set aside to cool..
Spread the cream over the dough then add the strawberries cut into slices. Decorate with a little mint.

Taste immediately !
