Fine tart with apples and dragees

Ces tartes fines sont un grand classique des mes parents, toute petite je dégustais déjà ce dessert qui ont pour moi, encore aujourd’hui, le goût de l’enfance et de la cuisine de famille. Pour donner un peu plus de croquant à ces tartes fines, j’ai rajouté des dragées, dont le goût d’amande s’allie parfaitement avec la pomme. Mais c’est bien sûr facultatif !!!

Fine tart with apples and dragees
Ingredients (pour 6-8)
- 2-3 apples (ici de la boskoop)
- une dizaine de dragées
Pour la compote
- 4 pommes à cuire
- 20 g cane sugar
- 1 packet of vanilla sugar
- 10 key of water
For the sweet dough
- 250 g of flour
- 125 g of butter
- 75 g cane sugar
- 1 egg
- 1 pinch of salt
Description
To prepare your sweet dough, work the butter and the sugar by hand so that the butter becomes "ointment". Then add the whole egg and work the mixture again. Add the flour and salt all at once and mix until you get a smooth paste..
Form a ball and refrigerate 1 hour.
Preheat the oven to 180°.
Pendant ce temps réalisez la compote, To do this, peel and cut the apples into pieces and put them with the sugar and water in a saucepan.. Let it cook 25 minutes over low heat then crush everything or mix. Book.
Roll out the dough on 3-4 mm thick and cut rectangles of approximately 15 cm per 6 cm.
Spread the compote on the pieces of sweet dough.
Peel and then cut the apples into quarters then into very thin slices. Then arrange the apple slices, by layering them on the compote.
Crush the sugared almonds and add them to the tartlets.
Bake 25 min.


Enjoy warm or cold with, for foodies, a spoonful of crème fraîche or a scoop of vanilla ice cream !

23.1.13Oh, this idea of using broken sugared almonds is great!, it smells like an ultra-delicious tart, and then apples and almonds, it's so yum ! I think I'm going to try a plant-based version, It looks really nice 😀 I can already imagine it crunching in my mouth ^^
