Oui je sais, ça n’est plus mais alors plus du tout la saison des cerisesj’ai longtemps hésité (peut-être trop car là ça fait belle lurette que la saison des cerises est terminée !) à vous présenter cette recette. And then, je me suis dit que j’avais bien aimé cette tarte rustique aux cerises, et qu’elle pourra toujours vous donner des idées pour l’année prochaine ! Je me suis aussi fait la réflexion (oui, oui ça m’arrive quand même de réfléchir !) que cette tarte peut facilement être réalisée avec des cerises au sirop. SO, if you stocked up on cherries like me, why not open a jar and make a pie ?!

Brief, you didn't dream, there is definitely rosemary in this tart ! Oui, because I find that cherries need to be accompanied so as not to feel too alone… and rosemary suits them so well !

Rustic cherry and rosemary tart {vegan}

Ingredients
  1. 250 g pitted cherries
  2. 40 g cane sugar
  3. A few sprigs of rosemary
  4. 2 tablespoons of fine semolina
  5. FOR THE DOUGH
  6. 150 g of wholemeal rye flour
  7. 50 g whole wheat flour
  8. 8 key of water
  9. 5 tablespoons of neutral oil
  10. 1 g de sel
  11. 2 tablespoons cane sugar
Preparation
  1. To make the dough, Mix the dry ingredients together then add the oil. Sand the dough with your fingertips then add the water gradually. Work the dough to form a homogeneous mixture. Form a ball and let rest 15 cool minutes.
  2. Preheat the oven to 180°.
  3. Roll out the dough on 3-4 mm thick forming a circle.
  4. Put the semolina on the bottom of the dough, leaving 4 cm on the edges.
  5. Chop the rosemary then add on top with the cherries. Sprinkle everything with sugar.
  6. Fold the edges of the dough over the cherries.
  7. Bake 25 minutes.

      Indeed the semolina is raw, Its role is to come and absorb excess liquid without distressing the dough 🙂
