Roquefort truffles, pistachio and cranberry
Cette petite recette je l’ai crée à base de roquefort Papillon (the best !), to win a nice little weekend in Toulouse and if you are good I will tell you about it soon !
To peck with your fingers, yes because what’s great is that it doesn’t stick, or to spread on a good slice of homemade bread.

- 150g de roquefort papillon
- 100g cream cheese
- 50g pistachios
- 50g de cranberries
- Mash the Roquefort with a fork and mix with the cream cheese. Reserve the mixture in the fridge 15 minutes.
- Crush the pistachios and chop the cranberries.
- Form cheese balls (environ 15) then roll them in the pistachio/cranberry mixture.
- Refrigerate before tasting.

18.6.15I don't like Roquefort, I'm not a fan of blue cheeses in general. I remember a memorable recipe for pears gratinated with Roquefort that went away… in the trash. A nice mess ^^’. However, I have an idea that these little things would be perfect using fresh goat cheese… =D
Emilie
20.6.15Whoops ! Yes to try with a good fresh goat’s cheese, it will fit perfectly !

19.6.15An excellent gourmet idea to remember !
This combination should somewhat attenuate the strong taste of Roquefort which bothers some people.. Moi, I like it as is but proposed like this… I'm going there !
Emilie
20.6.15Thank you Corinne 😉 The taste of Roquefort is still there but it is mainly for a better hold of the truffles !!!
