Velouté de christophine au lait de coco et au curry

Voici une petite soupe avec un légume que nos amis d’outre-mer connaissent bien , j’ai nommé la christophine. Je n’avais jamais gouté à ce légume alors, pour que nous faisions bien connaissance, je l’ai préparé en velouté. Ce velouté je l’ai cuisiné un jour où Léa et F. venaient bruncher à la maison, et je crois que tout le monde à bien racler son bol avec sa cuillère !!!

A re-cuisiner dans d’autres recettes sans hésitation !

Velouté of christophine with coconut milk and curry

Ingredients (pour 4 petits bols)

  • 5 christophines
  • 1 white onion
  • 15 cl of coconut milk
  • 1 vegetables soup
  • 1 c. to s. curry powder
  • 1 filet d’huile d’olive
  • Salt and pepper

Description

Ciselez l’oignon puis mettez-le à revenir dans une cocotte avec un filet d’huile d’olive.

Épluchez les christophine, coupez-les en deux, remove the heart then cut them into pieces. Add them to the onion.

Wet with water to the height, add the broth and curry then let it cook 35 minutes.

Mix everything with the coconut milk then adjust the seasoning.

    Mmm. This recipe looks succulent.
    I had tasted the christophines during my trip to Guadeloupe and I really liked it. In soup it must be delicious.
    On the other hand, I don’t know if I’ve ever come across these vegetables in French supermarkets…
