L’heure de la 7ème édition de la Battle Food a sonné et ce mois-ci c’est notre amie Olivia du sublime blogSokeen qui en est la marraine. Ce mois-ci elle nous a demandé de plancher sur le thème de la PâtàChouxun vrai défi car c’était réellement une première pour moi !

Même si j’adore déguster choux et chouquettes, éclairs et religieuses (houuuu la gourmande…), je n’ai jamais réalisé ces merveilles enfin ces choux quoi !!! Alors quoi de plus simplement gourmand que de la crème fouettée et des jolies fraises pour faire de jolis choux ?! Bah je vous le demande ma p’tite dame !

Alors oui j’ai cédé à la gourmandise pur et dur simple et je vous ai préparé des choux tout mignons et délicieusement régressifs !

Gariguette strawberry puffs, whipped cream and pistachio {Battle Food #7}

Ingredients (pour 6-8 personnes soit 2-3 choux par personne)

  • 500 g de fraises gariguettes
  • 50 whipping cream
  • 30 g icing sugar
  • 20 g de pistache

Pour la pâte à choux

  •  55 g of flour
  • 50 grams of milk
  • 50 grams of water
  • 45 g of butter
  • 2 medium eggs
  • 1 pinch of sugar
  • 1 pinch of salt

Pour le craquelin

  • 50 g of flour
  • 50 g cane sugar
  • 40 g softened butter

Description

Commencez par réaliser le craquelin, pour cela mélanger ensemble le sucre et le beurre pommade puis ajoutez la farine. Étalez la préparation sur 2-3 mm entre deux feuilles de papier sulfurisé et réservez au frais au moins 30 minutes.

Prepare the choux pastry by heating the milk, the water, sugar, salt and butter together in a saucepan. When everything is well melted, add the flour all at once and mix with a wooden spoon. Turn the dough in the pan to dry it out for 2 To 3 minutes. Put the dough in a bowl and let it rest 3 minutes.

Preheat the oven to 250° in static heat.

Then add the eggs one by one into the choux pastry., stirring well between each. Pour the batter into a piping bag.

On a baking sheet, make cabbage 3 cm in diameter by holding your piping bag vertically to the plate, cut sharply. Be sure to space them out.

Sortez le craquelin du frigo et découpez des disques un peu plus petits que les choux à l’aide d’un emporte-pièce. Arrange them on the cabbage.

Put in and turn off the oven. Let it cook 20 minutes. At the end of 20 minutes turn the oven back on at 180° in static heat and let dry 12 minutes. Do not open the oven door before the end of cooking cabbage !

Take them out of the oven and set aside.

Prepare the whipped cream for this use a siphon or beat the cold cream with icing sugar.

Cut the strawberries into 2 and book.

Just before serving cut your cabbage in half and arrange the standing half-films. Add the whipped cream to the center and previously crushed pistachios.

    I adore ! This is exactly what I had hoped to do (with strawberries and cream, And maybe a little grapefruit for my part) Before the Mission Choux turns out to be a disaster for me, ha ha 🙂 but I didn't say my last word, And even now that the Battle Food is finished I want to try again to finally get there !
