Creme brulee
La crème brûlée, voici un classique qu’on hésite souvent à réaliser car on pense que c’est trop long, too complicated… ! Mais détrompez-vous, il n’y a rien de plus simple qu’une bonne crème brûlée faite maison et même si c’est vrai la cuisson prend un peu de temps, la préparation, elle, ne vous prendra pas plus de 15 minutes ! Je vous donne donc ma recette de crème brûlée maison à la vanille et je suis sûre que vous en deviendrez accro ! Et puis quand on fait de la meringue, il faut bien trouver quelque chose pour utiliser ses jaunes !
Petit bonheur de la crème brûlée, you can break the sugar crust with the back of the teaspoon !!!
- 4 organic or free-range egg yolks
- 30 whipping cream
- 30 g cane sugar
- 1 vanilla pod
- 4 tablespoons of sugar for caramelization
- Preheat the oven to 100°.
- Heat the cream over low heat and add the split vanilla pod , remove from the heat and leave to infuse 10 min.
- Mix the yolks and the sugar so that the mixture becomes frothy.
- Return the cream to the heat without the vanilla, and at the first simmering pour it over the egg-sugar mixture and mix.
- Divide the preparation into 4 ramekins then arrange them in a baking dish and cover halfway with hot water.
- Cook in a bain-marie for 1h15.
- Once cooked, let the creams cool and place them in the refrigerator for 2 hours.
- Spread the sugar over the creams and caramelize them with a blowtorch or under the grill.
