Falafels mon amourQuelle drôle de déclaration me direz-vous ! Depuis mon tout premier voyage en Israël, je suis accro à ces boulettes de pois-chiches que l’on déguste dans du pain pita. Pris sur le pouce au coin de la rue, on termine toujours les mains pleines de sauce tahiné qui a dégoulinémais c’est ça qui est bon dans la cuisine de rue !

Je ne fais quasiment jamais de friture à la maison, voire jamais, mais là c’est vraiment pour la bonne cause, car les falafels sont parfaits lorsqu’ils sont croustillants à l’extérieur et moelleux à l’intérieur, and baking will never compete on this level…. but on the swimsuit level it’s another debate !!!

Ingredients
  1. 250 g dried chickpeas
  2. 1 small onion
  3. 3 c. tablespoon of chickpea flour
  4. 1 garlic clove
  5. 1/2 bouquet of parsley
  6. A few coriander leaves
  7. 1 c. tablespoon of cumin seeds
  8. 1 c. tbsp coriander seeds
  9. 1/2 c. pepper teaspoon
  10. 2 c. coffee. bicarbonate of soude
  11. 3 c. tablespoon of water
  12. 1 c. teaspoon of salt
  13. 1 liter of sunflower oil for frying
Preparation
  1. The day before, soak the chickpeas in cold water.
  2. The day after, rinse and drain the chickpeas then put in a blender with the onion, garlic, parsley and coriander then mix everything as finely as possible.
  3. Once the chickpeas are finely chopped, add the spices, le bicarbonate, salt, water and flour, stir to obtain a nice smooth paste (add a little flour if necessary) and thick. Book cool 1 hour.
  4. Heat the oil to 180°.
  5. Make balls of dough the size of a small golf ball using an ice cream scoop, for example, then dip them in the oil.. Let it cook 4 minutes, turning them halfway through cooking, they must be well browned and completely dry inside.

Serve in pita bread and accompany with Sauce Tahiné and a few strips of raw onion marinated in olive oil and raw vegetables.

    Me neither fried food… as little as possible. Already made falafels in the oven, but the texture is crumbling…
    Maybe I'll indulge in your falafels and fry them….

    It’s interesting this way of mixing chickpeas without pre-cooking., I use the same technique to make my lentil burgers °v° Your falafels look totally perfect in any case, my mouth is watering even at 9am’ !

      Yes because it will “lighten” the falafel when cooking but having never tested it without I don’t know the difference !!!
