Falafel

Falafels mon amour… Quelle drôle de déclaration me direz-vous ! Depuis mon tout premier voyage en Israël, je suis accro à ces boulettes de pois-chiches que l’on déguste dans du pain pita. Pris sur le pouce au coin de la rue, on termine toujours les mains pleines de sauce tahiné qui a dégouliné… mais c’est ça qui est bon dans la cuisine de rue !
Je ne fais quasiment jamais de friture à la maison, voire jamais, mais là c’est vraiment pour la bonne cause, car les falafels sont parfaits lorsqu’ils sont croustillants à l’extérieur et moelleux à l’intérieur, and baking will never compete on this level…. but on the swimsuit level it’s another debate !!!


- 250 g dried chickpeas
- 1 small onion
- 3 c. tablespoon of chickpea flour
- 1 garlic clove
- 1/2 bouquet of parsley
- A few coriander leaves
- 1 c. tablespoon of cumin seeds
- 1 c. tbsp coriander seeds
- 1/2 c. pepper teaspoon
- 2 c. coffee. bicarbonate of soude
- 3 c. tablespoon of water
- 1 c. teaspoon of salt
- 1 liter of sunflower oil for frying
- The day before, soak the chickpeas in cold water.
- The day after, rinse and drain the chickpeas then put in a blender with the onion, garlic, parsley and coriander then mix everything as finely as possible.
- Once the chickpeas are finely chopped, add the spices, le bicarbonate, salt, water and flour, stir to obtain a nice smooth paste (add a little flour if necessary) and thick. Book cool 1 hour.
- Heat the oil to 180°.
- Make balls of dough the size of a small golf ball using an ice cream scoop, for example, then dip them in the oil.. Let it cook 4 minutes, turning them halfway through cooking, they must be well browned and completely dry inside.


Serve in pita bread and accompany with Sauce Tahiné and a few strips of raw onion marinated in olive oil and raw vegetables.
