Je crois que depuis que je connais Monsieur, je n’ai fait qu’une seule fois du flan coco… boo not good !!! Pourtant je crois que les flans (quels qu’ils soient !) font partie de mes desserts lactés favoris. C’est pour moi très régressif de retourner son flan et de voir le caramel se napper par dessus, ça vous rappelle un flan industriel je parie ?!!

Bon, là il n’est pas question de ça mais d’une version à la noix de coco et au citron vert, oui car comme ça vous aurez l’impression d’être au bord d’une super plage à Cuba ou ailleurs au soleil… (hummm caliente !) ! Donc pour affronter la baisse des températures (oui on sait, it comes back often…), here is a very exotic little pick-me-up (and I didn't say rum !).

Lime coconut flan

Ingredients (pour 6 ramekins)

  • 4 eggs
  • 1 can of sweetened condensed milk (400g)
  • 35 cl of milk
  • 60 g grated coconut
  • The zest of 2 limes
  • 125 grams of sugar
  • 2 c. to s. water

Description

Preheat the oven to 160°.

Prepare your caramel, To do this, put the sugar and water in a saucepan then heat everything over high heat until the caramel takes on color (I didn't say burned !). Spread it at the bottom of the ramekins.

Beat the eggs then add the sweetened condensed milk.

Then add the milk to the preparation and add the grated coconut and lime zest.

Pour the mixture into the ramekins then put them in a bain-marie dish (water halfway up).

Bake 30 minutes.

    It’s funny because I’m talking about flan these days…as I want to do it. I have memories of Mexican flan with piña!

    I hope to try your recipe soon…I don’t know what this “sweetened condensed milk” is..

    Hello Emlie,
    I am in the process of making your recipe which is in the oven and I was wondering how the unmolding goes given that if we put the ramekins after cooking in the fridge, the caramel will harden and stick to the ramekin… Thank you in advance for your response 🙂

      It's true that I unmolded them before complete cooling for the photo by passing a knife all around the flan !

        Merci ! In the end I had to transport them to a dinner to which I was invited so I didn't unmold them. But it is better not to wait for it to cool because the caramel is hard like ice cream after the fridge and we were not able to taste it, it remained at the bottom of the pot 😉
        Maybe you should use salted butter caramel for example. ?

          Indeed, but the caramel which hardens is not due to cooling because during cooking part of the caramel hardens and the other liquefies., you can see it in the photo, It’s a bit of a fool’s game unfortunately !

    Just like you, I really like this type of dessert.! and I imagine that with condensed milk the texture must be firmer than a fla*by in short you made my mouth water!
