Focaccia courgette, pesto and herbs
L’été se poursuit et même si la rentrée est proche, les belles journées sont encore là et qui dit beau temps, dit apéro et qui dit apéro dit verre de vin focaccia ! J’avais déjà partagé avec vous la recette de base de la focaccia et là je vous propose une petite amélioration, une focaccia courgette, pesto et sauge. A vrai dire c’est jusqu’à présent ma recette de focaccia préférée, ce qui est surement dû à la présence de pesto, I love that ! D’ailleurs pour le pesto, I made Lily's family recipe which is perfect and you will find just ici (you can also use pesto already made but it's still not quite the same thing !).
So I leave you with this tender focaccia, just waiting to be adopted !!!
- 800 g brown wheat flour
- 300 g sourdough, refreshed
- 450 grams of water
- 85 g d'huile d'olive
- 10 g de sel
- 4 tablespoons of olive oil
- 1zucchini cut into slices
- 6 tablespoons of pesto
- 1/2 bunch of sage
- You gros sel pig
- Mix the flour and water together, knead at speed robot 1 or by hand 3 minutes then add the sourdough, salt and oil.
- Knead 10 minutes to obtain an elastic dough.
- Form a ball, put it in a salad bowl, cover with a towel and let rise 2-3 hours.
- Transfer the dough to two baking sheets and roll it out, being careful not to overwork it.
- Poke holes with your fingers all over the surface then leave to rest 30 minutes in a warm place.
- Preheat the oven to 210°.
- Oil the focaccia then add the zucchini slices on top, I grind them, sage leaves and coarse salt.
- Bake 30-40 minutes.

3.9.15Zucchini is pesto, it's a killer, but I would never have thought to add sage! It must be great! Plus my man and I love focaccia, and we have zucchini to finish in the fridge, so I think this recipe will make an appearance on the menu tomorrow 😉
