Pea Hummus {vegan – sans gluten}

Yes I know, ça vous donne envie d’un bon apéro, c’est le but… so why not make one tonight for the end of the weekend (yes everything is good as an excuse to have an aperitif !) ?!

- 200 g of rehydrated and cooked chickpeas
- 200 g fresh peas
- 3 tablespoons of tahini (sesame cream)
- 1 garlic clove
- The juice of 2 lemons
- 4 tablespoons of olive oil
- 2 tablespoons of water
- 1/2 teaspoon salt
- Crush the garlic clove and salt in a mortar.
- In a blender, add the chickpeas, the peas and the garlic/salt preparation.
- Mix and add water, lemon juice, olive oil and tahini then mix again, the mixture should be more or less smooth.
- Serve on toast and garnish with fresh peas.

21.6.15Thank you for this recipe which really tempts me. A stupid little question : rehydrated chickpeas, these are indeed chickpeas that we left to soak in water overnight ? Merci.
Emilie

14.7.15Bonjour,
thank you very much for this recipe. However, I have a slightly ridiculous question.… You note “fresh peas”, but they must be cooked just like chickpeas?
Thank you in advance for your answer
Emilie
23.7.15Peas are good added raw to hummus, this question is not ridiculous it is me who is not specified !!!
Clairelle
28.3.16A true delight! Lighter than classic hummus, and a first for the use of raw peas as far as I am concerned. I put it in every meal this weekend, even at breakfast, on a corn pancake, my my.
