Peach muffin, hazelnuts and cream cheese

Voici aujourd’hui un petit muffin qui fait le trait d’union entre l’été et l’automne, les dernières pêches avec les premières noisettes. Ces dernières viennent du jardin de belle-maman et qui ont été grillées pour apporter au muffin un petit goût torréfié.

Le cœur de fromage frais est une vraie surprise et apporte beaucoup de fondant et de douceur à l’ensemble.

Peach muffin, hazelnuts and cream cheese
Ingredients (pour 12 muffins)
- 250 g of flour
- 150 g de fromage frais
- 100 g cane sugar + 3 c. to s.
- 50 g cereal flakes
- 50 g de noisettes grillées hachées
- 15 cl of buttermilk
- 12,5 cl d’huile
- 2 large eggs
- 2 c. at c. baking powder
- 1 c. at c. bicarbonate of soude
- 3 peaches
Description
Preheat the oven to 200°.
Mix the flour together, sugar, les noisettes, cereal flakes, yeast and baking soda.
Lavez et découpez les pêches en quartiers, réservez-en 12 et coupez les autres en gros morceaux. Mix the peach pieces into the flour mixture.
In another container, beat the eggs with the buttermilk and the oil then add this preparation to the flour mixture. Mix without working the dough too much.
Pour the batter into non-stick muffin tins or muffin cases until half full and add a teaspoon of cream cheese. Cover with the rest of the dough and add a peach wedge on top. Sprinkle with a little sugar.

Bake 20-25 minutes.

However, when you talk about fresh cheese, are you talking about St Moret/Philadelphia type cheese or a white cheese? ?
