POUR 4 PEOPLE

FOR THE PROCESSED CHEESE

  • 400 g silken tofu
  • 18 cl of dry white wine from Savoy
  • 80 ml of neutral vegetable oil
  • 3 cloves of garlic
  • 30 g of tapioca flour
  • 3 tablespoons of brewer's yeast
  • 1 little spoon of salt
  • ground pepper

FOR THE APERO BOARD

  • Beet marmalade
  • Onion confit
  • 400 g walnut bread
  • 300 g seed crackers
  • Vegetable roulade
  • Fruits : here apples and grapes
  • Dried fruits : ici des cranberries
  • Nuts

  • To make the melted cheese, heat the white wine together, oil and coarsely chopped garlic cloves in a saucepan.
  • Boil 3 minutes then remove from heat.
  • Add the silken tofu, salt, brewer's yeast and tapioca flour and mix with an immersion blender until smooth.
  • Return to heat and stir constantly with a whisk until thickened. (environ 3 minutes) then book.

  • Then add the marmalade and confit in small bowls.
