Pears in red wine, vanilla and red Kampot pepper

J’ai trouvé de jolies poires au marché bio, mais je les ai achetées sans savoir ce que j’allais en faire. C’est en revenant à la maison que j’ai vu cette bouteille de vin rouge Bordeaux qui attendait patiemment dans le placard, et je me suis dis que je n’avais jamais cuisiné de poires au vin.

J’avais très envie d’un vin chaud en cette période de fêtes, et l’idée d’une poire aux épices me tentait bien. Il me restait du poivre rouge de Kampot et je l’ai simplement associé à de la vanille de Madagascar pour une saveur tout en puissance.

This recipe takes time because you have to let the pears rest in their syrup for 24 h before tasting them. So be patient because the game is worth it. !
Pears in red wine, vanilla and red Kampot pepper
Ingredients (pour 5)
- 5 pears (here of the Packham variety)
- 75 cl of red wine
- 200 g cane sugar
- 1 vanilla pod
- 1 c. at c. ground Kampot red pepper
Description
Gently heat the wine and sugar in a saucepan. Add the split vanilla pod and its grains as well as the ground pepper.
Peel the pears, keep the tails and immerse them in the red wine syrup.
Let it cook 45 min at simmer, turning them frequently.
Let the pears rest in their syrup 24 h in the refrigerator before serving.

And why not accompany the pears with a good homemade salted butter caramel ?!
