Salade de chou rouge

Chez nous les salades c’est à tous les repas, donc pour changer des carottes râpées je vous propose une salade de chou rouge. Le chou rouge refait son apparition sur les étals en même temps que le maïs et les pommes de terre nouvelles, voilà comment j’ai simplement eu l’idée de les marier tous les trois ! Bon, comme j’adore le chou j’ai aussi adoré cette salade mais je suis sûre que vous l’aimerez aussi car elle est à la fois simple et change un peu de l’ordinaire. Et puis je dois vous dire une seule chose, take advantage of the fresh corn season because it's still way better than its canned namesake !

Salad From Red Cabbage, potatoes and corn

Ingredients
  1. 1 little red cabbage
  2. 10 small new potatoes
  3. 1 fresh corn on the cob
  4. 1 Red onion
  5. 1/2 bouquet d'aneth
  6. 1 filet d'huile de colza
  7. 3 tablespoons apple cider vinegar
  8. 1 cuillère à soupe de sirop d'agave

Preparation
  1. Faites cuire les pommes de terre à l'anglaise (boiling salted water) 10-15 minutes depending on their size (poke to check for doneness). Book.
  2. Retirez l'enveloppe du maïs et faites le cuire 6 minutes in boiling salted water. Let cool.
  3. Émincez finement le chou et l'oignon, coupez les pommes de terres en quatre puis à l'aide d'un bon couteau retirez les graines de maïs en le tenant droit et en coupant le maïs dans la longueur.
  4. Ajoutez au mélange l'aneth ciselée.
  5. Prepare the vinaigrette by mixing the vinegar, le sirop d'agave et un bon filet d'huile, emulsify and add to the salad.

    Oh you found fresh corn in a market in Grenoble? I don't think I've ever seen one! When I was in Germany I found some, I made an orgy out of it haha! This salad is super pretty with these colors, I will have to try it because all the ingredients are foods that I love, but I think I have rarely associated them.

      You can find it in organic stores or replace it with maple syrup for example !
