Lors de notre voyage en Israël, nous avions notamment ramené du moughrabieh séché. Si si je vous jure, je parle bien français ! Le moughrabieh c’est en réalité de petits grains de semoules agglomérés, plus gros que les graines de couscous, c’est une céréale typique de la cuisine moyenne orientale.

Allez faire un tour dans une bonne épicerie Libanaise ou Israélienne et je suis sûre que vous en trouverez. Si vous n’en trouvez pas vous pouvez toujours faire cette salade avec du boulghour. Cette salade de moughrabieh est à la fois gourmande et saine, I used a mixture of seeds that I also brought back from a trip but you can make your own composition with what you have on hand !

Salade moughrabieh, oven roasted pumpkin, red onion and seeds

Ingredients (pour 4)

  • 200 g de moughrabieh
  • 1/2 pumpkin
  • 1 Red onion
  • 1 filet d’huile d’olive
  • juice of 1/2 lemon
  • 50 g of a mixture of seeds and fruits (lingonberries, raisins, almonds, nut, sunflower seeds, pumpkin seeds, pistachios, sesame)

Description

For cooking the pumpkin, go see ici. Let the pumpkin cool before using it.

Cook the moughrabieh as directed on the package, personally I cook mine 15 min in a broth and I run it under cold water after cooking. Drain it and place it in a salad bowl.

Chop the red onion and add it to the moughrabieh. Then add the pumpkin pieces.

Add seeds and dried fruits as desired.

For the sauce, mix a drizzle of olive oil with the juice of half a lemon and salt., emulsify and pour over the salad.
