Quinoa and vegetable salad, sauce pesto {vegan – sans gluten}
Oui je sais ce que vous allez me dire, on est en automne et c’est clairement la saison des courges et des choux… oui mais mamie Émilie (ça me fait tout drôle dit donc!) fait de la résistance ! Bref je me refuse, même si j’en ai envie, d’acheter des légumes d’automne tant que mon producteur à encore sur son étal des courgettes, des tomates et des poivrons, bref des légumes d’été. Oui parce que les courges, là tout de suite, elle nous font envie mais on va en manger tout l’hiver et en mars prochain on ne pourra plus se les voir ! So if like me you haven't yet given in to the sirens of autumn, follow me I'll take you for a little recipe for quinoa and vegetable salad with a little pesto sauce (I hope you like the trip program !). A salad that couldn't be simpler but with a little pesto sauce that makes all the difference and that's often what makes the difference from one salad to another. Even though I’m a fan of the cider vinegar/olive oil combo., I'm not a plan plan from a sauce point of view, I like variety. For the sauce, you can do your pesto maison or go straight to the supermarket to find your favorite (yes I know you…! at the same time I do the same !).
Anyway, I hope you managed to follow me, it’s gone a bit in all directions today… Come on, let's make a salad !
- 200 g of quinoa
- 150 g of millet
- 250 g cherry tomatoes
- 2 lawyers
- 2 handfuls of baby spinach
- FOR THE PESTO SAUCE
- 3 tablespoons of pesto (without cheese)
- 1 filet d'huile d'olive
- The juice of a lemon
- 1 tablespoon of agave syrup
- Cook the quinoa and millet as directed on the packet, drain and let cool.
- Cut the cherry tomatoes in half or quarters depending on their size and the avocados into cubes.
- Wash and drain the spinach leaves.
- For the sauce, mix all the ingredients together with a whisk to form an emulsion..
- Mix all the salad ingredients and serve with the sauce.
