Spaghetti with Roasted Tomatoes and Basil {vegan}

Il en faut peu pour être heureux.. cette devise du livre de la jungle (niveau référence la barre est placée haute !) s’applique parfaitement à ce petit plat de spaghettis aux tomates rôties, car avec peu d’ingrédients la magie opère et il ne faut pas plus pour se régaler. Comme vous l’avez sans doute remarqué, j’ai un peu déserté le blog ces derniers temps mais j’avais une bonne excuse car j’étais en vacances, et puis il y a eu le rush de la rentrée…bref c’est passé maintenant alors je suis tout à vous ! Bon, we're not going to lie, roasted tomatoes are life, with bread or like here with pasta it’s the kind of thing I can’t resist for long (Besides, I stocked up on tomato confit in the fridge). For this recipe the pasta must be cooked al dente and the cherry tomatoes must be selected carefully (the best in the world), mine come from my dad's garden and I must say that the varieties he grows are both beautiful (no but you have seen these yellow pear tomatoes !!!) and succulent !
This little dish is unmissable, you will seduce whoever you want with, it just needs the best ingredients in the world and it will be perfect, here it is said !


- 500 g of spaghetti
- 500 g cherry tomatoes (here multicolored)
- 1 Small basil bouquet
- 1 sprig of fresh rosemary
- A few sprigs of fresh thyme
- 40 g pine nuts
- Olive oil
- Salt and pepper
- Preheat the oven to 150°.
- Arrange the roasted tomatoes in a baking dish and add the thyme, Rosemary, salt and pour a good drizzle of olive oil on top. Bake 40 minutes.
- At the end of cooking the tomatoes, cook the spaghetti as directed on the package, drain and mix with the tomatoes.
- Serve with fresh basil and pine nuts.
