Les fêtes de fin d’année arrivent à grand pas, l’esprit de Noël à déjà gagné la plupart d’entre nous il est donc temps de penser aux choses sérieuses c’est à dire le repas ! Cette année je vais vous proposer 5 recettes vegan et parois gluten free, de l’apéritif au dessert en passant par les chocolats, de quoi largement vous satisfaire je l’espère. Ce menu s’adresse à la fois aux vegan et aux non vegan (pas de clivages) car il reprend des codes de la cuisine traditionnelle mais vue sous un angle végétal. Toast de champignon au beurre d'escargot {Noël vegan}

Ingredients
  1. 20 mini brown button mushrooms
  2. 7-8 walnut bread slices
  3. 100 g silken tofu
  4. 1/4 bunch of parsley
  5. 1/4 bunch of chervil
  6. 1 clove garlic
  7. 1 pinch of salt
  8. 1 filet d'huile d'olive
  9. FOR THE SNAIL BUTTER
  10. 100 g vegetable margarine
  11. 5 cloves of garlic
  12. 1/2 bunch of flat-leaf parsley
  13. 1 teaspoon of fleur de sel
Preparation
  1. Start by preparing the mushroom stuffing, for this mix together as for a pesto, parsley, chervil, garlic clove, salt and olive oil. Mix this "pesto" with silken tofu and emulsify the whole. Book cool.
  2. Meanwhile prepare the snail butter, finely chop the parsley then the garlic cloves and mix with the ointment margarine. Finish by adding the fleur de sel.
  3. cookie cutter 20 stars (or circles) in the walnut bread then spread with snail butter.
  4. Place on a baking sheet and bake 1 minute under the grill. Book.
  5. Remove the mushroom stems and garnish them with the herbed tofu cream.
  6. Finish by arranging the mushrooms on the toast and enjoy !
