Ce qu’il y a d’extraordinaire dans une pavlova, c’est qu’au delà des apparences c’est un gâteau super léger (bon là je ne parle pas des calories bien sûre !), même après un bon repas c’est un dessert qui est vraiment appréciable. La pavlova fait partie de mes desserts favoris, oui car le combo meringue/chantilly/fruits c’est juste parfait (vous connaissez meilleur dans la vie ?! Moi non !!!). J’avais déjà fait des pavlova par ici, une à la chantilly de coco et litchis et des minis-pavlovas, mais jamais une belle et grande pavlova traditionnelle. Bon c’est choses faite, So I'll give you the basics with this pavlova with red fruits and its vanilla whipped cream, but you can do with it what you want. ! I like red fruits because their acidity goes well with the sugar of the meringue but it's also strawberry season so it's up to you. Anyway, have fun with this endlessly customizable dessert., both by the whipped cream that can be flavored and by the chosen fruits

Ingredients
  1. 4 egg whites
  2. 120 g powdered sugar
  3. 120 g icing sugar
  4. 1 pinch of salt
  5. 40 whipping cream
  6. 30 g icing sugar
  7. 1 pinch of vanilla powder
  8. 250 grams of red fruits
Preparation
  1. Preheat the oven to 90°.
  2. Whip the egg whites with the pinch of salt then add the powdered sugar three times while continuing to whisk. Then add the icing sugar and stir with a spatula. Put the meringue in a piping bag.
  3. Pipe the pavlova by first forming a thick circle then form the edges going up with the piping bag.
  4. Bake 1 hour 15 minutes.
  5. Make the whipped cream by whipping the very cold whipping cream then incorporating the sugar and vanilla, continuing to whisk so that it is firm. Put it in a piping bag.
  6. Assemble the pavlova by adding the whipped cream in the center of the meringue then arrange the red fruits
