Macarons aux mûres

Lors d’une promenade en forêt avec Monsieur pour ramasser des champignons et des châtaignes, nous sommes tombés sur des buissons de mûres et nous n’avons pas pu résister à l’idée de nous écarter de notre cueillette initiale ! J’adore les mûres, alors après la key lime pie aux mûres fraiches voici les macarons. Une ganache fondante au chocolat blanc et aux mûres et des mûres fraîche pour décorer, Yum… it's too good !

C’est mon premier essai de macarons et je n’ai pas très bien gérer mon colorant qui à un peu viré à la cuisson, alors j’espère que vous ne m’en tiendrez pas trop rigueur !!! Thanks to Cyrille for his initiation last time, this recipe is a little thanks to you !

Ingredients (for a good dozen large macaroons)

For the macaroons

  • 200 g icing sugar
  • 120 g ground almonds
  • 100 g egg whites
  • 50 g powdered sugar
  • Purple dye

For the ganache

  • 100 g blackberries + some for decoration
  • 100 g of white chocolate
  • 10 whipping cream

Description

Mix together the almond powder and the icing sugar then mix everything to obtain the finest possible powder.. Pass the mixture through a sieve.

Beat the egg whites until stiff then add the sugar little by little to form a nice firm meringue..

Then add the meringue to the almond-sugar mixture, lifting the mass and slowly mix the dough, until the meringue is well integrated without breaking it then add a little coloring.

Put the mixture in a piping bag and pipe circles on a baking tray covered with parchment paper.

Let the macaroons crust 45 min at room temperature.

Meanwhile make the ganache, To do this, mix the blackberries and pass this puree through a sieve to remove the grains..

In a saucepan, heat the cream and once it boils, add the white chocolate then the blackberry puree. Refrigerate while you use it.

Preheat the oven to 150°.

Place the macarons halfway in the oven and let cook 13 minutes.

Remove the macarons from the oven and slip a little water under your parchment paper so that the macarons peel off well after cooling..

Garnish the shells with ganache using a piping bag and decorate with blackberries then store in the refrigerator in an airtight container if you don't eat everything beforehand. !

    For a first it’s a real success. For the coloring you should always overdose slightly, the color fades a little when cooked. So even if it looks neon it will always be lighter once out of the oven ! Kisses girls

    This takes me back to my childhood memories. I was taking a walk then I saw blackberry bushes ! I ran home to get a basket and the pick-up was truly miraculous. <3 C'était les meilleures mûres que j'ai goûtée, I will always remember this natural flavor.
