C’est enfin le retour de la saison de l’ail des ours chez nous en montagne, et si vous me connaissez bien, vous savez qu’ici on adore cette plante fabuleuse au bon goût d’ail (d’où son nom !!!). Depuis quelques années c’est devenu notre petit rituel du mois d’avril de partir à la cueillette en famille et d’en faire pas mal de choses dont du pesto d’ail des ours !

L’ail des ours c’est le trésor des sous-bois,

où elle pousse en abondance et son goût en fait une plante de plus en plus adorée et connue de tous. Few years ago (olala it does not make me younger !), I had already suggested that you make some capers but also of butter made from flower buds. This year I finally give you my pesto recipe, a wild garlic pesto very simple with sunflower seeds but that you can exchange for blanched almonds for another version !

wild garlic pesto {vegan}

POUR 1 THICK POT

  • 2 bunches of wild garlic leaves
  • 30 g wild garlic flower buds (optional)
  • 150 g sunflower seeds
  • 30 cl d’huile d’olive
  • Salt and pepper
  • Wash with water and vinegar and dry the wild garlic well.
  • Cut it coarsely and mix it with the oil and sunflower seeds then season to taste.
  • Put in a sterilized jar, Cover with olive oil and keep refrigerated.
  • Consume within two weeks over pasta, with vegetables, on bread..
